Sheri and I enjoyed some warm soup on a cold wintery day. We had Vegtable soup and I told her I would get her the recipe...so here it is, for Sheri and anyone else who would like the try the recipe!
Vegtable Beef Soup
1 # ground beef (I used gr. turkey)
1 T. oil
1 c. carrots
1/2 c. sliced onion
1/2 c. sliced celery
2 T flour
1 (13 3/4-14 1/2 oz) can beef broth (I just use 1.5 cups of hot water with 2 beef boullion cubes)
1 (14 oz) can italian or mexican tomatoes (I used italian)
1 can water
1 tsp. worcestershire sauce
salt & pepper
1/2 cup frozen peas (I forgot to add these today...sometimes I will sub corn or green beans...whatever I have)
2 T parsley (this seems like a whole lot of parsley...I just add some to taste)
Brown beef in soup pan. Remove beef with slotted spoon. Add oil to pan, add carrots, onion, celery. Cover and cook about 5 minutes. Stir in 2T flour. Cook 1 minute. Add beef broth, tomoatoes (with juice), water, and beef. Add seasoning, bring to a boil, cook gently for a half hour. Stir in peas and parsley, cook for a few more minutes.
